Course Objective and Content

Course Objectives: The aim of this course is to study the fundamentals of food microbiology, intrinsic and extrinsic factors of microbial growth in food environment, the importance of microorganisms in production of some traditional foods. Pathogenic microorganisms that can cause food intoxication and infection.
Course Content: In this course we will study the fundamentals of food microbiology including history and classifications.
We will also study the importance and the most common and serious food pathogens and foodborne illness.

Learning Outcomes

The students who have succeeded in this course;
1) -After successful completion of this course the students will have learned important microorganisms that can spoilage food and cause food intoxication and infection.
2) - The conditions which make these microorganisms grow in food.
3) - Student will know the important pathogens which are commonly killed or inactivated in food industry involves food preservation.
4) - Improvement of student’s success skills especially in oral and written communication, defining the problem, identifying the problem and find a possible solution.
5) - As medical students, they will learn more about food borne diseases and their prevention
6) - Improvement of student’s research and presentation skills
